Spanish Rice

1 c. white rice
1 T. vegetable oil
1 14.5 oz. can stewed tomatoes
1 minced garlic clove
1/2 t. salt
1 carrot, grated
2 c. water, tomatoe juice combined

Heat oil and brown rice. Strain tomatoes and combine with water to make 2 cups. Chop up tomatoes. Mince garlic with salt to help it not become sticky on your knife. Grate carrot. Add water mixture to rice, garlic, tomatoes and carrot. Bring to boil, reduce heat, and simmer on very low for 20 minutes.
You can use any spices you like such as chili, cumin, cajun blends or anything else you have a taste for that compliments the ingredients.

Blueberry Buckle

1 1/2 c. sugar
1/2 c. soft butter
2 eggs
1 c. milk
4 c. flour
4 t. baking powder
1 t. salt
4 c. blueberries

Mix sugar, butter and egg together. Stir in milk. Sift together flour, baking powder and salt and stir into first mixture. Blend in blueberries.

Topping
1 c. sugar
2/3 c. flour
1 t. cinnamon
1/2 c butter

Mix together and sprinkle on top. Bake at 375 for 45-55 minutes. 9x13 pan

Turkey Burgers

1 lb. ground turkey
4 oz. mushrooms, minced
1 small onion, minced
1T. BBQ sauce
1 T. chili powder
pepper
1 T. Worcestershire sauce
Cooking oil spray
4 whole wheat hamburger buns

Garnish
sliced onion, tomato, and lettuce

Put the ground turkey, mushrooms, onion and seasonings in a bowl. Squish together thoroughly. Make 4 patties. Heat grill, spray patties and cook aproximately 7 minutes per side. Warm buns on grill.

Bean Salad

1 can green beans
1 can yellow beans
1 can kidney beans
1 can garbanzo beans
1/2 c. chopped green pepper (optional)
1/3 c. chopped red onion (optional)
1/4 c vinegar
2 T sugar
2 T oil
1/4 t celery seed
1/2 t dry mustard
1 small clove garlic, minced

In a large bowl combine drained beans, sweet pepper and onion. In a jar combine the vinegar, sugar, oil, celery seeds, dry mustrard, and garlic. Cover and shake well. Pour over vegetables, stir lightly. Cover and marinate for 4 to 24 hours. Serves 6-8. Calories 120

Summer Heat

Its too hot to bake right now,especially, if you don't have air conditioning. So think cold sandwiches, salads, and microwaves.If you are thinking of grilling remember to take notice of how everything fits together before disassembling to clean. It could put a damper on using the grill. Popsicles and fruit for dessert. I had a delicious banana popsicle compliments of Deans. It's too bad that there isn't any banana in them, only artificial flavor.

Banana Bread

1 cup sugar
1/3 cup butter, softened
2 eggs
1 1/2 cups mashed ripe bananas (3-4)
1 2/3 cup ultra grain flour
1 t baking soda
1/2 t salt
1/4 t baking powder
1 cup chocolate chips
1-2 grated rinds of orange

Heat oven to 350. Grease bottom of loaf pan only. Mix sugar and margarine.(Whip it up. Sir in eggs and blend well. Add bananas, beat well. Stir in remaining ingredients. Pour into pan. Bake until wooden pick inserted in center comes out clean. 55-60 minutes. 24 slices= 130 calories approximately. Loosely based off of Betty Crockers Cookbook

Quick Breads

I am making banana bread today. I am changing it up by adding chocolate chips and orange rind.
I think oranges and chocolate go together. This is the second loaf using this particular combination of ingredients.
Last week I made a whole wheat sweet bread with molasses as the sweetener. It was reminiscent of gingerbread. It was great toasted but way too dry otherwise.
