Coffee Cake

 2 cups flour

2 t. baking powder

2 cups sugar

Mix together.

Mix in 2 or 4 cup container:

2 eggs

2t. vanilla

1/2 cup oil

Fill up container to 2 cup mark with milk

1 stick of butter, powdered sugar and cinnamon


Beat everything together until smooth.

Grease a 9X13 pan. Bake for 20-30 minutes. Check with toothpick for doneness at 20 minutes. Do not overbake.

When the cake comes out of the oven take a stick of butter and rub it over the cake until it melts. Soften stick on top of the oven while cake is baking. Sprinkle powdered sugar and ground cinnamon over the top.

Serve warm or cold.

Bake at 350 F. for 35 minutes.

Irish Soda Bread Cookies

2 cups all purpose flour
 1/2 t. baking soda
 1/4 t. salt
 1/2 cup butter, softened 
1/2 cup sugar
 1 egg
 3/4 cup raisins
 1/3 cup buttermilk
 2 T. sugar for tops 
 1. Preheat oven to 350F. Line two sheets with parchment paper

 2. Combine flour, baking soda and salt in medium bowl

 3. Beat butter and sugar in a large bowl with mixer on medium speed until fluffy. Add egg. Beat one minute until mixed. Add flour and beat on low until combined. Add raisins and buttermilk until combined.

 4. Drop 1 T. of dough 1 inch apart on prepared baking sheet. Score top of cookie with X and sprinkle with sugar. Bake 12-15 minutes until light brown on bottoms. 5. Remove to wire rack. Serve warm. 
Makes 2-3 dozen.
